This has been requested before,

This is 100% possible, however, the finished product that would be produced would be buggy at best. Our best hope is someone works out how to port animations from RDR2 to GTA5 as GTA does not come with a "horse" type control. I'll move this to rejected for now but we may review again in the future if more knowledge is gained.
